5 Minute Brekkie: Egg in a Pepper

Ok, this is an adventure site, not a cooking blog, however, sometimes the adventure is in your kitchen! (I couldn’t resist)… That being said, I present to you this very short, yet hopefully informative post about a quick brekkie I made this past week, an Egg in a Pepper!

I got the idea from a pic I saw on the internet. These things are abundant and normally the idea looks like a novel one but we never really follow through – I mean, how many ‘something in a cup’ recipes have we come across and thought “hmmm, that sounds interesting” but then never actually got around to trying? Plenty.

This time, however, the meal was so simple I just had to give it a go. It’s so easy: Slice a thick enough piece of pepper (I used green and red and both worked nicely flavour-wise), pop it in the pan (having heated a little oil), let it sit for a few seconds then crack your egg in there! Simple as that. The egg may run a little out the sides but mostly it will work just fine. I put a lid over the pan to cook faster and prevent some burning at the base (this is unfortunately somewhat inevitable but it doesn’t burn enough to ruin the meal, so don’t be disheartened!). After a few minutes the egg will have cooked through and you’ll have your Egg in a Pepper, ready to plate…

Tada! Plated, with Tabasco, Himalaya Salt and Black Pepper. Sorted.

Then, add whatever spices etc you like, kick back and enjoy your brekkie!
